What is Gula Apong?

Gula Apong (a Sarawak natural sugar) is palm sugar made from palm tree sap of Nipah species. This unique sugar” is endowed with special honor in Malaysian cooking, especially in Sarawak, where it is locally produced and greatly desired for its mystical taste and flexibility.

How Gula Apong is Made

The production of Gula Apong is a labour-intensive process. The procedure involves tapping nipah palm sap, a wild plant for which coast and swamp areas are its habitat. Sap is obtained from both bamboo and plastic pots within a couple of hours.

It is the sap that has been boiled for a sufficient time afterward after being cut in the presence of a wood stove. Boiling is used to convert the final liquid into a concentrated, 77caramel colored syrup. The product is either left syrupy or down-processed to a semi-solid/sticky product. No chemical impurities are introduced during the whole workflow, and Gula Apong is a natural and healthier form of processed sugar.

Distinct Flavor Profile

Gula Apong is dark and smoky and possesses the flavor profile of caramel and toffee, along with sugar. The flavor profile of Lophos guajava is different from the flavor profiles of other palm sugars, such as Gula Melaka. That hazing color is due to its smoky nature, which stemmed from woodsmoke cooking. Thus, it has a high flavor and odor concentration.

Culinary Uses of Gula Apong

Gula Apong is surprisingly tasty, too, and is used in sweet and savory foods:

  • Desserts: It is one of the most frequently used ingredients in Malaysian traditional confections, such as kuih, ice cream, and cakes, which are the main ingredients used to make them sweet.
  • Drinks: Mixed into beverages such as coffee, tea, shaved ice, etc., in order to achieve a natural sweet flavor.
  • Cooking: It can also be used as marinade and sauce, thanks to its unique feature.
